Apple Strudel and Sinus Nonsense
I needed something sweet and easy to throw together. I was suffering from a sinus infection that was clearly out to see if it was possible to cause my brains to explode and leak out through my eyes and nose. Thankfully, it doesn't appear to be possible.
Anyway, I made this apple strudel from the Vegan Yum Yum cookbook. It was so yummy! Sadly, it wasn't able to cure me of my pain.

Peanut Butter
My wonderful, loving, generous, and sexy husband had a craving for a cupcake with peanut butter and banana flavors. I (taking any opportunity to bake something) decided to make him a banana cupcake with peanut buttercream filling and chocolate frosting. All vegan and all delicious. The first bite I took of this did not impress me too much because I didn't get all the flavors together. When you get to the center and taste the banana, peanut butter and chocolate all together....YUM!! Super Yum!

Corny bread!!
Yee haw!!
I finally made the most amazing vegan cornbread. It tastes like cornbread! Other attempts have resulted in a good tasting cornbread with a not so pleasing texture. This one is yummy and has and not super heavy and dense. I love it! Picture sucks, I know.

Chocolate Cupcake with Cream Cheese filling
This whole "baking everyday thang"...
I love baking. I mean I REALLY LOVE it! t is like therapy for me. However, my waist and butt don't appreciate me doing it everyday and they are rebelling against me. So, for the sake of them (and my wardrobe) I will not be baking every day. I will bake once a week or whenever the hell I feel like it. Which will probably be once a week! :)

Day 8 (on time and everything)
One of my favorite-est cookies of ALL time are the Girl Scout Samoa cookies. So I pretty much squealed with glee when I saw this recipe in the Vegan Cookies Invade Your Cookie Jar cook book! They were so much fun to make and even more fun to eat! They are about as close to the real thing as you can get. A little bit messy, but who cares?!
