These have serious potential to be the most delicious thing I've ever put into my mouth. However, the cake part of the cupcake just didn't hold together well. I will not use that recipe again. The cream cheese filling was absolutely deeeelish!
I used a recipe from a book called The Joy of Vegan Baking. I didn't have any Ener-G egg replacer so I had to wing it with something else. I used milled flax and water. I'm thinking that's why it didn't hold together. I try to avoid using the Ener-g too much anyway.
yeah i noticed that in the VCTOTW book they don't use Ener-G thats why i am liking their recipes cause you can use stuff that you can normally find in a regular grocery store :)
Just wanted to post a little note here with an update on these sneaky little tricksters. After leaving them in the fridge overnight they are superfreakingdelicous!!
